Mexican hot chocolate is more than just a warm drink; it’s a rich tradition. Unlike its sweeter counterparts, this version offers a complex flavor profile, blending rich cocoa with warm spices.


It’s a soul-warming beverage that has been enjoyed for centuries, tracing its roots back to ancient Aztec and Mayan cultures. The key is the perfect balance of sweet, bitter, and a touch of heat.


Ingredients:

• 4 cups whole milk

• 1/2 cup unsweetened cocoa powder

• 1/3 cup granulated sugar

• 1 cinnamon stick

• 1/4 teaspoon chili powder (or a pinch of cayenne)

• 1/2 teaspoon vanilla extract and A pinch of salt


Instructions:

1. In a medium saucepan, whisk together the cocoa powder, sugar, chili powder, and salt.

2. Gradually pour in the milk while whisking continuously to prevent lumps. Add the cinnamon stick.

3. Heat the mixture over medium heat, stirring often, until it is hot but not boiling.

4. Remove from the heat and take out the cinnamon stick. Stir in the vanilla extract.

5. Pour into mugs. For an authentic frothy top, use a traditional wooden molinillo or a small whisk and froth the hot chocolate vigorously before serving.
