Celebrate with a DANCE
Are you looking for a food that is delicious, nutritious, and fun to eat? Salsa has it all and there is no better time than National Salsa Month to add this colorful and zingy food to your meal!
This variation starts with black beans and gets spicy from there. To really celebrate salsa month, dance in your kitchen or invite friends over and ask everyone to bring their own special salsa recipe. You may be surprised at how many versions of salsa there are—and a kitchen dance is always a good idea.
Black Bean & Pineapple Salsa
1 (15 oz) can black beans, drained and rinsed
2 cups pineapple tidbits, drained,
reserve 1/4 cup juice.
1 cup diced red bell pepper
6 green onions, thinly sliced
1/4 cup cilantro leaves, chopped
1 tablespoon olive oil
1 seeded jalapeno pepper, minced
Simply combine all ingredients and place in the refrigerator. Make this salsa a day ahead of serving so the flavors can mingle.
