Black Bean & Pineapple Salsa
Ingredients
1 (15 oz) can black beans, drained and rinsed
2 cups pineapple tidbits, drained,
reserve 1/4 cup juice.
1 cup diced red bell pepper
6 green onions, thinly sliced
1/4 cup cilantro leaves, chopped
1 tablespoon olive oil
1 seeded jalapeno pepper, minced
Simply combine all ingredients and place in the refrigerator. Make this salsa a day ahead of serving so the flavors can mingle.
