Directions:

1. Melt your chocolate in a microwave or using a double boiler.

2. Dip each strawberry into the melted chocolate, rolling to cover 3/40 of the berry.

3. Place on parchment paper and drizzle with melted white chocolate if desired.

4. Refrigerate for 30 minutes to set.

3. Remove pears and reduce the liquid until it becomes syrupy.

Directions:

1. Preheat oven to 450°F (230°C) and butter 4 ramekins.

3. Whisk eggs, yolks, and sugar until pale, then fold in the melted chocolate & butter.

4. Gently fold in the flour until just combined.

5. Pour into ramekins and bake for 10–12 minutes. The edges should be firm, but the center soft.
