Nothing beats a stack of warm, fluffy pancakes to start your day. This simple recipe makes best pancakes that are soft, airy, and irresistibly delicious.

Ingredients:
1 1/2 cups (190g) all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon granulated sugar
1 1/4 cups (300ml) milk
1 egg
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract (optional but recommended)
Instructions:
Prepare the Batter
Mix dry ingredients:
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
Combine wet ingredients:
In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
Combine wet and dry:
Gradually pour the wet ingredients into the bowl with the dry ingredients. Gently stir until just combined. Be careful not to overmix; lumps are okay! Overmixing can make the pancakes dense instead of fluffy.
Cook the Pancakes
Heat up the pan:
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter or oil.
Scoop the batter:
Use a 1/4 cup measuring cup or ladle to pour the batter onto the hot skillet. Do not spread the batter; it will naturally spread into a circle.
Cook until bubbles form:
Cook the pancake for 2-3 minutes, or until bubbles start to form on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes, or until golden brown on both sides.
Repeat with the remaining batter, greasing the pan lightly as needed.
Serve and Enjoy
Stack the pancakes high, top them with your favorite add-ons (butter, maple syrup, whipped cream, fresh fruits, or powdered sugar), and serve immediately to enjoy their fluffy goodness.
