Ingredients For the Salad:
4 cups heirloom tomatoes (variety of colors), roughly chopped
3 cups crusty bread (like a baguette or sourdough), cut into 1-inch cubes
1 small red onion, thinly sliced
1/2 cup fresh basil leaves, torn
1/2 cucumber, sliced (optional)
1 cup fresh mozzarella balls, halved (optional)
For the Vinaigrette:
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 clove garlic, minced
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions
Step 1: Prep the Bread
Preheat your oven to 375°F (190°C).
Spread the bread cubes on a baking sheet in a single layer. Drizzle with 1–2 tablespoons of olive oil and toss to coat.
Bake for 8–10 minutes, or until golden and crispy. Remove from the oven and set aside to cool.
Step 2: Prepare the Vegetables
While the bread is toasting, place the chopped tomatoes in a large bowl. Sprinkle lightly with salt and set aside for 5–10 minutes. This will draw out their natural juices, which will enhance the flavor of the salad.
